Carrot and celeriac (celery root) salad

Ingredients
1 large celery root, peeled thickly to remove the nobby skin
2 large carrots (or 3 medium)
1/2 tsp sea salt
Black pepper, to taste
1 tsp sugar
1 Tbsp olive oil

Instructions:

Slice the celery root and carrots into long, thin shreds, using the shredder attachment of your food processor, or a mandoline, vegetable cutter, or grater.

In a bowl, toss the shredded vegetables with the other ingredients. Taste, and adjust the seasoning if needed. This can be eaten right away, but it will mellow a little as it rests.
