French-Onion Stuffed Potatoes

Ingredients
1 large onion, thinly sliced
2 tbsp olive oil
1/4 cup beef broth
3/4 cup gruyere, shredded
4 russet potatoes

Instructions:

Bake potatoes at 400° for 1 hour. Cook onion with olive oil and salt until caramelized, about 30 minutes.

Scoop flesh out of the potatoes and mash with the onion, beef broth, and 2/3 of the gruyere. Stuff into the skins, top with more cheese, and broil to melt.
