Ginger,Cantaloupe-Coconut Milk Soup

You’ll Need:

2 med ripe cantaloupes, cut into halves, seeded
1/2 cup sugar
1/3 cup fresh orange juice
1 tbsp fresh lime juice
1 tbsp fresh lemon juice
1 can coconut milk, 8-ounce
1/4 tsp vanilla extract
1/8 tsp ground ginger
3/4 cup half-and-half
Rum to taste

Procedures : Scoop the pulp from the cantaloupes. Place in large bowl.
Add the sugar, orange juice, lime and lemon juices, coconut milk, vanilla, ginger, half-and-half and rum; mix well.
Pour half of the mixture into a blender container. Process for 2 to 3 minutes or until smooth. Repeat with the remaining mixture.
Pour into a large nonreactive bowl. Chill, covered for several hours.
Ladle into teacups or soup bowls
