Guacamole baked potatoes

Ingredients
4 russet potatoes, scrubbed clean
2 avocados
1 tbsp red onion, diced
1 tbsp cilantro, chopped
1/2 tsp jalapeno, minced
salt
1 roma tomato, chopped

Instructions:

Preheat oven to 400F. Pierce potatoes all over with fork. Bake potatoes for 1 hour. Meanwhile, mash the avocados, lime juice, red onion, cilantro, jalapeno, and salt. Spoon onto baked potatoes. Top with tomato.
