Peach & Pickled Pepper Grilled Cheese

Ingredients
4 slices sandwich bread
1/2 oz sweet piquante peppers, roughly chopped
2 oz fontina cheese, thinly sliced
2 oz white cheddar cheese, thinly sliced
1 tbsp butter
1 clove garlic

3 cup salad greens, washed and torn
3 oz radishes, halved and thinly sliced
1/2 tbsp dijon mustard
1/2 tbsp mayonnaise
1 tsp olive oil
1 tbsp apple cider vinegar
salt and pepper
1 oz goat cheese

Instructions:

Assemble sandwiches with **bread**, **cheese**, **peach**, and **peppers**. Season with salt and pepper. Melt **butter** over medium heat, and cook sandwiches 2-4 minutes per side until golden brown. When finished, rub with **garlic clove** and season if desired.

While the sandwiches cook, whisk together the **mustard**, **mayo**, **vinegar**, **olive oil**, and a pinch of **salt and pepper**. Toss the **lettuce**, **radish**, and **goat cheese** with the dressing. Serve.
