Pickled red onions

Ingredients
3/4 cup lime juice
1/4 cup red wine vinegar
1 tbsp salt
1 red onion, thinly sliced

Instructions:

Bring all ingredients except red onion to a boil in a small saucepan. Remove from heat and let cool, 5 minutes. Toss with red onion in a bowl; cover and chill at least 4 hours, stirring occasionally.
