Super Protein Salad

Ingredients
2 cup salad greens
1/4 cucumber, sliced
1/4 cup black beans, drained and rinsed
1/4 cup chickpeas, drained and rinsed
1 tbsp pistachios
2 tbsp dried cranberries

salt and pepper, to taste
2 tbsp olive oil
1 tbsp red wine vinegar
1 tsp Dijon mustard

Instructions:

Combine olive oil, vinegar, mustard, salt and pepper to taste. Toss with other ingredients in a bowl and serve.
